La Colomba Pasquale — “The Easter Dove”
La Colomba Pasquale is the traditional Italian cake of Easter. Similar to panettone, this naturally leavened sweet bread is made with creamy butter, eggs, flour, and candied orange peel, then topped with a crisp almond glaze, whole almonds, and sugar crystals.
The dough is slowly developed over nearly 72 hours, allowing it to rise naturally and develop its signature light, fragrant texture. After shaping the dough into the classic dove form, it is finished with almond paste and baked until golden.
Gary Rulli has been baking Colomba Pasquale in Larkspur for over 40 years, continuing a tradition that originated in Northern Italy.
Each cake is handmade in small batches in our bakery.
